Hummus or Humus
540ml tin of Chickpeas rinsed with the skins removed
3 cloves of Garlic crushed with salt
Juice of 1 Lemon
2 teaspoons of Cumin
Salt to taste
2 tablespoons of Sunflower Oil
1 teaspoon of Paprika
1 tablespoon of Pine Nuts lightly toasted
How to prepare
To easily remove the chickpea skins soak them in hot water for 5-10 minutes then rub gently in water between your palms.
Place all ingredients in a food processor and blend until smooth.
Place the mixture in a serving bowl or plate.
Heat the sunflower oil in a small pan and add the paprika.
As soon as it bubbles remove from the heat and pour over the hummus.
Sprinkle the pine nuts on top.
Serve with toasted pita bread.
