480ml of dried Fava Beans
1 chopped Onion
1½ teaspoon of Sugar
1 tablespoon of Extra Virgin Olive Oil
730ml of Water
Pinch of Salt
Extra Virgin Olive Oil
How to prepare
Soak the Fava Beans overnight then remove and discard the skins.
Put the main ingredients in a pan bring to a boil and simmer for 1½ hours.
Once cooked blend the beans until smooth.
Place the mixture in a shallow serving to cool.
When cold make a diamond shaped cut pattern.
Drizzle olive oil and lemon juice on top before serving.
As an alternative add dill or fresh mint before blending.
