Kidney Bean Salad
540ml tinned White Kidney or Cannellini Beans
2 diced Tomatoes
¼ thinly sliced Red Onion or 4 finely chopped Spring Onions
1 small chopped Cubanelle Pepper or long Green Pepper
For the dressing:
½ the juice of a Lemon
50ml of Extra Virgin Olive Oil
Pinch of Salt
Pinch of Pepper
For the garnish:
3 hard-boiled eggs cut into quarters and 4-5 Black Olives
How to prepare
Wash and drain the beans, mix together with the onion and tomato and spoon on to a serving plate.
Mix the dressing ingredients together and pour on to the beans.
Garnish with the eggs and black olives.
