Chicken with Walnuts or Cerkez Chicken
2 Chicken Breast Fillets
2-3 crushed cloves of Garlic
200gr chopped Walnuts
200gr day old Bread (crust removed)
Pinch of Salt
Pinch of Pepper
2 tablespoons of Sunflower or Olive Oil
1 teaspoon mixed Paprika and Cayenne Pepper
How to prepare
Place the chicken In a pan and cover with water, put the lid on and cook on a medium heat until tender.
Remove the chicken and keep the stock water.
Soak the bread in the stock to absorb the liquid.
Remove the bread and squeeze out the liquid in the palms of your hands and place in a large bowl.
Cut the chicken into small pieces and add to the bowl along with the garlic, salt and pepper.
Mix well with a fork into an even consistency then add the walnuts and mix again.
If the mixture seems too dry slowly add more chicken stock until it softens.
Spoon the mixture on to a serving plate.
Meanwhile heat the oil in a pan, add the pepper and when it starts to bubble remove from the heat and pour over the chicken.
