Aubergine or Egg Plant Salad
1 jar of roasted and cleaned aubergines
1 roasted red pepper
2 cloves of garlic
3 serving spoons of olive oil
Pinch of salt
5 stems of parsley
How to prepare
Put the jar of aubergines in a bowl. (If you like you can roast the aubergines yourself on the hob by turning the aubergines every two minutes. Then, when the aubergines cool, you can peel off the skin by the help of a knife).
Slice the red peppers (again roasting it yourself, you can purchase this in a jar from a supermarket) and add them to the bowl.
Crush the garlic and finely slice the parsley and add it to the bowl with the salt and olive oil.
Mix it well.
Aubergine salad is a very simple dish that you can prepare in just 2-3 minutes.
