Ezme or Crushed Tomato Salad
250 gr tomatoes
1 green pepper (sweet)
1/2 cucumber (small Turkish size)
2 spring onions
Pinch of dried mint
Pinch of salt
Pinch of pepper
Pinch of paprika or fine sweet chilli
1 tablespoon of pepper paste
1 tablespoon of olive oil
2 tablespoons of vinegar
How to prepare
Peel the tomatoes and chop them very finely.
Chop the cucumbers very finely.
Remove the seeds of the pepper and cut them very finely.
Remove the outer layer of spring onions and cut them very finely.
Put these into a bowl, add all the remaining ingredients and mix them well.
