50gr crumbled Feta Cheese
1 deseeded and diced Cubanelle or long Green Pepper
2 diced Tomatoes
3 tablespoons of diced Cucumber
½ thinly sliced Red Onion
2 tablespoons of chopped Mint
2 teaspoons of Lemon Juice
2-3 tablespoons of Extra Virgin Olive Oil
Pinch of Salt
Pinch of Pepper
How to prepare
Combine all the ingredients except the cheese in a bowl.
Then add the cheese, lemon juice and olive oil along with more seasoning if required.
