White Bean Salad
250gr dry White Beans
1 large Onion
3 medium peeled and chopped Tomatoes
3 sliced Green Peppers
2 tablespoons chopped Parsley
3 Eggs hardboiled and quartered
12 Black Olives
2 teaspoons of Salt
2 tablespoons Olive Oil
How to prepare
This recipe makes 4 servings.
Soak the beans overnight in water, drain and place in boiling water and cook until tender.
Drain the beans, place in a bowl and sprinkle on the salt and 100ml of vinegar.
Leave to stand for 2 or 3 hours.
Slice the onion lengthwise, place in a bowl and rub in salt to extract some of the liquid.
Wash and drain the onion, drain the beans add to the onion and mix in the parsley.
Add the tomato and green pepper and garnish with the olives and egg quarters.
In a small bowl mix the olive oil, remaining vinegar, some salt and pour over the beans.
