Fried Aubergine with Yogurt Sauce
120ml Sunflower Oil
120ml plain yogurt
1-2 cloves of Garlic crushed with salt
How to prepare
Partially peel the aubergines making long stripes and slice them into 4 horizontal long pieces.
Place the aubergines in a large bowl of water with a handful of salt and soak for two hours to remove any bitterness.
After two hours dry the aubergines and cut them approx. 1.5cm thick.
Add the oil to the pan and wait until it is very hot then add the aubergine and fry until golden brown.
Remove from the pan and drain on kitchen paper to remove any excess olive.
Crush the garlic and mix it well with the yogurt.
Once the aubergines are cool pour the yogurt on top.
