Haydari with Carrots
3-4 large peeled and grated Carrots
3-4 sliced Garlic
½ teaspoon of Mint
3 tablespoons Extra Virgin Olive Oil
240ml creamy Yogurt
Pinch of Salt
Pinch of Pepper
Crushed red pepper
How to prepare
Lightly fry the garlic in olive oil for one minute.
Immediately add the carrot and continue to fry for 3-4 minutes stirring occasionally.
Add the salt, pepper and mint, stir and allow it to cool down.
Once cool mix in the yogurt and place in a dish garnished with the walnut halves and red pepper.
The Turkish name for this dish is Havuclu Haydari.
