4 medium size courgettes
3 headed serving spoons of flour
4 spring onions
1/2 bunch of parsley
3 stems of dill
Baking powder (1 individual pack or 1 spoon)
Pinch of salt
Pinch of pepper
Pinch of dried mint
How to prepare
Peel the skin of courgettes in stripes, leaving some of the skin on.
Grate the courgettes and leave them in a strainer for 10 minutes to drain all the water. (You can also help drain the water by squeezing the courgettes with your hand)
Chop the parsley, dill and spring onions very finely. Put these in a bowl.
Add the grated courgettes, eggs, flour, baking powder, salt, pepper and mint. Mix it very well.
Put frying oil in a pan and turn on the hob.
When the oil is sizzling hot, get a serving spoon full of the mixture in the bowl, put it in the oil and with the help of another spoon, immediately form the round shape of the mucver.
After frying both sides of the mucver, it is ready to serve. You can either serve this dish medim hot or cold depending on your choice. It also goes very well with garlic yogurt.
