Roasted Red Pepper Cheese Rolls
1 large Red Bell Pepper
60gr soft crumbled Feta or Goats Cheese
1 finely chopped Spring Onion
1 tablespoon of chopped Walnuts
1 tablespoon of Extra Virgin Olive Oil
½ teaspoon of Oregano
½ teaspoon of crushed Pepper
How to prepare
Remove the pepper top cut in half and discard the top and seeds.
Pre-heat the oven grill.
Place the pepper on an oven tray skin side up and grill for 15 minutes.
Placing the pepper in a paper bag for a few minutes helps remove the skin more easily.
Cut the pepper into strips 2.5cm wide.
Mix together the cheese, oil, oregano, pepper, walnuts and onion, spoon evenly on the ends of a pepper strip and roll up.
Place on a platter and garnish with black olives.
