Tavuk Gogsu Puding with Kadayif
For the pudding:
1 liter of milk
125 gr margarine
1 glass of flour
1 glass of white sugar
1 pack of whipped cream (called krem santi in Turkey)
1 teaspoon of starch
For the kadayif:
250 gr of kadayif
100 gr of margarine
1 glass of walnut (divide each walnut into 8-10 pieces)
1 glass of sugar
How to prepare
You can buy the kadayif from any Turkish market in Turkey or abroad. Separate the kadayif into pieces with your hand. Put the margarine in a pan and when it melts add the kadayif slowly, add the sugar and stir regularly until the kadayif gets a brownish colour. Add the walnut and turn off the hob.
Put the margarine in another pan, add the flour and starch, and cook for appx 3 minutes. Add the milk and cook couple of minutes while stirring. Add the sugar (if you have you can also add a spoon of mastic) and cook while stirring until the mixture boils and thickens. Turn off the hob, add the whipped cream and whisk for 5 minutes with a blender.
In a pyrax, put half of the kadayif, spread them evenly. Put the pudding mixture on top of it, spread it evenly with a spoon, and finally the remaining kadayif on top of the dessert.
When the dessert cools little bit, put it into the refrigerator for appx 2 hours.
