Asure - Wheat Pudding
250 gr wheat
50 gr rice
50 gr white beans
50 gr chickpeas
100 gr dried fig
100 gr dried apricots
150 gr sultanas
25 gr pine nuts
25 gr currants
100 gr hazelnuts
100 gr walnuts
4 lt of water
3 glasses of sugar
1 lt milk
How to prepare
Soak the rice, wheat, white beans, fava beans and chickpeas in water in separate bowls over night.
Drain the rice, wheat, white beans, fava beans and chickpeas.
Cook the rice for 30 minutes in 2 lt of water.
Boil the wheat in 2 lt of water. Add the blended rice and cook for 2-3 hours.
Cook the beans and chickpeas seperately until tender.
Remove the skins of the chickpeas.
Add the milk and sugar to the wheat.
Dissolve potato starch in a glass of water and add to the pudding.
Cook until the pudding thickens.
Cut the dried fig, apricot into small pieces.
Add these with the white beans, chickpeas, fava beans, sultanas and currants to the pudding.
Cook for a further 15 minutes.
Put into small bowls.
Decorate the top with pomegranate seeds, almonds, hazelnuts, walnuts, pine nuts, currants and sultanas.
