Noah's Pudding Asure
220gr of Barley
60gr tinned rinsed, drained White Kidney Beans
60gr tinned rinsed, drained Chickpeas
1 teaspoon of Vanilla Extract
2.4lt of Water
10 dried Apricots, soaked overnight and diced
10 dried Figs diced
120gr of Raisins
To garnish: 50gr chopped Walnuts
How to prepare
Place the barley and 960ml of water in a large pan and bring to a boil on a high heat.
As soon as it boils reduce the heat to a medium low and simmer for ½ an hour.
Add the beans, chickpeas, apricots, raisins, figs, vanilla and sugar and remaining hot water.
Cook for 45 minutes on medium low heat stirring occasionally.
When cooked place into a large serving dish and allow it to cool.
Garnish with the walnuts sprinkled on top and keep in the fridge.
