2 sheets Filo Pastry or 1 Turkish Yufka
For the filling:
8 tablespoons of Tahini
67gr of Sugar
27gr ground Walnuts
½ teaspoon of Cinnamon Powder
To glaze: 1 Egg Yolk and Sesame Seeds
How to prepare
Preheat the oven to 190˚C.
Combine all the filling ingredients together.
Place the two sheets of pastry on top of each other in a vertical position.
Spread the filling all over the pastry, roll up and place in the fridge for one hour.
Line an oven tray with parchment paper.
Place the pastry roll on top, brush with egg yolk and sprinkle on the sesame seeds.
Bake until the top is a golden colour, approx. 15-20 minutes.
If using the yufka spread the filling all over and cut in half.
Roll it up starting at the round edge and place in the fridge for one hour.
Brush with the egg, sprinkle with the seeds and bake as above.
The Turkish name for this dish is Tahinli Yufka
