Ingredients

For the dough:
400ml of Water
45g of unsalted Butter
½ teaspoon of Salt
155gr of Flour
3 Eggs
For the syrup:
1.68kg of Sugar
960ml of Water
1 teaspoon of Lemon Juice
Also: 480ml of Sunflower Oil

How to prepare

Place all the syrup ingredients in a large pan and boil for 10-15 minutes.
Allow it to cool down then divide it into two separate bowls.
Heat the water, butter and salt in a pan bring to a boil, reduce the heat and add the flour.
Keep stirring until the mixture becomes doughy.
Remove from the heat and set aside for a few minutes.
Add the eggs to the mixture one at a time ensuring each one is well blended before adding the next.
Add the oil to a large fry pan and on a low setting heat the oil.
Fill a pastry bag with the dough and squeeze out thumb size pieces breaking them off with your fingers.
Turn the heat up to just over medium, drop the dough in, fry them evenly and remove with a slotted spoon.
Place them on kitchen paper to remove any excess oil.
Put the fried dough into the two bowls of cold syrup and leave for 20-25 minutes.
Stir them occasionally to make sure they soak up all the syrup.
Use a slotted spoon to place them to a serving dish and serve while they are still crisp.
