Fried Aubergine & Bell Peppers
1kg medium sized Aubergines stems removed
6 Bell Peppers, destalked, deseeded and cut in half lengthways
1 tablespoon of Salt
200ml Sunflower Oil
For the sauce:
3 large peeled and chopped Tomatoes
4 crushed cloves of Garlic
2 tablespoon of Vinegar
Pinch of Sugar, Salt and Pepper
How to prepare
This recipe makes 6 servings.
Prepare the aubergines by cutting them lengthways into ½cm slices.
Alternatively peel lengthwise strips off and cut them diagonally into 1cm pieces.
Sprinkle the aubergines with salt and leave to stand for 30 minutes.
Dry the aubergines with kitchen paper lightly pressing out excess liquid.
Heat the oil in a pan, fry the peppers and both sides of the aubergine until golden brown.
Drain them on kitchen paper
Heat olive oil, add the tomatoes and garlic and cook for 7-8 minutes stirring occasionally.
Add the vinegar, salt and pepper and mix in well.
Pour over the vegetables.
For an alternative sauce use 500gr of Yogurt mixed with 4 cloves of crushed Garlic.
