Artichokes with Fava Beans in Olive Oil


4 peeled and cleaned Artichokes
1 small sliced Onion
½ teaspoon of Sugar
4 tablespoon Extra Virgin Olive Oil
Pinch of Salt
For the filling:
60gr shelled and skinned Fava Beans
½ teaspoon of Sugar
1 teaspoon of Lemon Juice
4 tablespoons of Extra Virgin Olive Oil
Pinch of Salt
For the garnish:
1 tablespoon chopped Parsley or Dill
Drizzle of Extra Virgin Olive Oil

How to prepare

Add the oil to a pan, then the artichokes, onion, sugar and salt, cover and simmer until the artichokes are tender.
When they are tender, leave the lid on the pan and allow them to cool down.
In the meantime cook the filling ingredients on a low heat and also allow them to cool down.
Place the artichokes on a serving dish and spoon in the filling.
Drizzle on the oil and sprinkle with parsley or dill and serve at room temperature.
