Fava Beans in Olive Oil
400gr Fava Beans
480ml of Water with 2 tablespoons of Lemon Juice added
1 chopped small Onion
2 x 37ml Extra Virgin Olive Oil
2 tablespoons of Sugar
1 tablespoon of Flour
2 tablespoons of chopped Dill
Pinch of Salt
How to prepare
Wash and trim both ends of the beans and use a knife to shave the sides.
Place them in the lemon water to prevent them from discolouring.
Heat 37ml of oil in a pan and lightly fry the onion.
Add the beans and 240ml of the lemon water along with the other the ingredients except one tablespoon of dill.
Half cover with a lid and cook on medium low heat for 20-25 minutes.
It may be necessary to add more lemon water during the cooking process.
Allow the mixture to cool before placing on a serving dish.
To serve drizzle on the remaining oil and sprinkle on the remaining dill.
The dish is best eaten chilled.
