1 tin of drained and rinsed Kidney Beans
1 diced Cubanelle or Long Green Pepper
2-3 slices of Spring Onions
1 sliced small Carrot
2-3 sliced cloves of Garlic
1 large diced Tomato
75ml of Extra Virgin Olive Oil
1 tablespoon of Sugar
1 teaspoon of Salt

How to prepare

With the exception of the beans put all the other ingredients into a pan.
Add 120ml of water cover and cook on a medium heat for 15 minutes.
Add the beans and 120ml of hot water, place the lid half on and cook for 10-12 minutes
Spoon onto a serving dish and allow to cool
To serve sprinkle on juice.
This dish is best eaten cold.
