Lentils with Minced Meat

Ingredients

200gr minced Beef or Lamb
400gr Lentils
2 large finely chopped Onions
4 tablespoons of Butter
2 large peeled and chopped Tomatoes or 2 tablespoons Tomato Paste
1 litre Beef or Lamb Stock
2 teaspoons of Salt
½ teaspoon Pepper

How to prepare

This recipe makes 4 servings.
Cover the lentils with water and leave to stand for 2 hours.
Melt the butter in a pan, add the onion and fry until they are light brown.
Add the meat and salt and pepper.
Cook for 15-20 minutes until the liquid has evaporated stirring occasionally.
Add the tomato or tomato paste, the stock, cover with a lid and simmer.
Meanwhile drain the lentils and put in a pan with 2 litres  of boiling water.
Cook the lentils for 20 minutes, drain and then add them to the meat.
Cover and cook on a low heat for a further 45 minutes until the lentils are tender.
