White Beans with Meat
200gr White Beans
250gr Mutton diced into small cubes
2 large chopped Onions
2 large peeled and chopped Tomatoes
4 tablespoons of Butter
1 litre Lamb of Beef Stock
1 Long Green or Red Pepper cut into 4-5 pieces.
2 teaspoons of Salt
Pinch of Paprika
How to prepare
This recipe makes 4 servings.
Place the beans in cold water and soak for 8 to10 hours.
Put them in a pan of boiling water and cook on a medium heat for 30 minutes then drain.
Melt the butter in a pan and lightly brown the onions.
Add the meat and cook until the liquid evaporates stirring occasionally.
Add the tomatoes, pepper pieces and salt.
Cover with a lid and cook for 45 minutes on a very low heat.
Add the beans and stock, cover and simmer until the beans are tender.
Sprinkle on the paprika and serve hot with rice and mixed pickles on the side.
The Turkish name for this recipe is Etli Kuru Fasulye.
