Fish Cooked in Milk
250gr fillets of Sole, Haddock or other similar fish cut into medium sized pieces
8-10 thin slices of Red Onion
½ sliced Cubanelle or Long Green Pepper
1 chopped Spring Onion,
3-4 tablespoons of Extra Virgin Olive Oil
2 tablespoons grated Mozzarella Cheese
1 Egg Yolk
Pinch of Salt
Pinch of Pepper
Pinch of Paprika
Pinch of Cayenne Pepper (optional)
How to prepare
This recipe makes 1 serving
You will need a greased ovenproof dish
Preheat the oven to 200˚C.
Place the slices of red onion in the bottom of the ovenproof dish.
Sprinkle the fish with salt and pepper and place them on the onions.
Next place the pepper and green onions and drizzle olive oil all over.
Beat the eggs. milk and cream together and pour over the fish.
Sprinkle over the cheese, paprika and cayenne pepper if using.
Place in the oven and bake until the top turns a golden brown.
This dish should be served warm.
