Shrimp Gratin with Mushrooms
12 medium peeled and deveined Shrimp
2 large peeled and diced Tomatoes
10 thinly sliced julienned Brown Mushrooms
1 diced Cubanelle or Long Green Pepper
2 chopped Spring Onions (white part only)
1-2 sliced cloves of Garlic
2-3 tablespoons of Extra Virgin Olive Oil
1 teaspoon of Lemon Juice
Pinch of Salt
Pinch of Pepper
For the topping:
28gr grated Kaşar or Mozzarella Cheese
1 beaten Egg
Pinch of Paprika
How to prepare
This recipe makes 2 servings.
Preheat the oven to 200˚C.
Cook all the main ingredients in a medium sized pan on a low heat until the water has evaporated.
Divide the mixture into 2 individual casserole or gratin dishes.
Combine the eggs and cheese in a separate bowl and pour over the dishes.
Sprinkle on some paprika.
Place the bowls on the oven tray and bake until the cheese turns a golden brown.
