Swordfish on Skewers
750gr of Swordfish diced into 10cm pieces
4 long Green Peppers cut into 10cm pieces
1 sliced Lemon
1 sliced Tomato
1 tablespoon of Salt
1 tablespoon of Lemon Juice
1 tablespoon of Olive Oil
1 tablespoon of Onion Juice
1 teaspoon of ground Paprika
12 Bay Leaves
For the sauce:
Juice of a large Lemon
120ml Olive Oil
4 tablespoons of chopped Parsley
How to prepare
This recipe makes 4 servings.
Place the fish in a bowl and add the lemon juice, oil, onion juice, salt, pepper and bay leaves.
Mix well and leave to stand in a cool place for 5-6 hours.
Skewer the fish lengthways with a pepper, tomato and lemon in between each piece.
Place them on a barbeque or under a grill and cook for 5-6 minutes on each side.
During the cooking process brush them occasionally with the marinade.
Mix together the sauce ingredients.
Serve with the sauce and fresh steamed new potatoes.
