Aubergine & Beef Moussaka
1 large Aubergine
200gr Minced Beef
1 sliced Onion
1 or 2 sliced cloves of Garlic
¼ diced Red Bell Pepper
½ diced Cubanelle Pepper
2 chopped Spring Onions
4 tablespoons tinned chopped tomato
Pinch of Salt
Pinch of Pepper
120ml of Water
120ml of Sunflower Oil
How to prepare
Partially peel the aubergines making alternating long stripes.
Cut them vertically in 3-4 pieces each 2.5cm thick then cut again horizontally each piece 5cm long.
Soak in water with a tablespoon of salt for ½ hour then wipe dry with kitchen paper.
Heat the oil in a large fry pan and cook both sides of the aubergine until a medium brown colour.
Once they are cooked place on kitchen paper to remove any excess oil.
In the meantime cook the minced beef with the onions, tomato, garlic, salt and pepper.
Add the peppers and spring onion and cook for 5-6 minutes.
Lay the aubergine pieces in another pan spoon the beef mixture on top and add 120ml of water.
Cover and cook on a medium heat for 15 minutes.
Serve with Pilaf rice.
