Ingredients

4 medium Aubergines
1kg of Mutton diced into cubes
2 large Onions sliced thinly lengthways
2 medium peeled and chopped Tomatoes
2 tablespoons of Butter
3 tablespoons of Oil
2 teaspoons of Salt
½ teaspoon Pepper
250ml of warm Water

How to prepare

This recipe makes 6 servings.
Slice the aubergines lengthways into four then cut each into 4cm long pieces.
Place them in a bowl of salted water and let them stand for 30 minutes.
Drain them and lightly squeeze out any excess water.
Heat the oil and butter in a pan, lightly fry the aubergines and remove them from the pan.
Place half of the meat in the same pan and sauté for 2 or 3 minutes then remove.
Repeat this with the remaining half of the meat.
Place the onions in the pan and lightly brown them.
Add the tomatoes and cook for 2 minutes.
Add the meat, salt, pepper and water and cover with a lid.
Simmer on a low heat for 1½ hours or until the meat is tender.
Add the aubergines and cook for a further 30 minutes.
