Courgette Stuffed with Beef
5 small Courgettes
150ml of Hot Water
2 tablespoons finely chopped Tomato
2 tablespoons of Extra Virgin Olive Oil
For the filling:
150gr Mince Beef
3 chopped Onions
2 tablespoons rinsed and drained Rice
50ml of Water
Pinch of Salt
Pinch of Pepper
For the sauce:
120ml Yogurt, 2 tablespoons of chopped Dill and 1 clove of garlic clove crushed with salt.
How to prepare
Wash the courgette, cut thin slices from the top and bottom to enable them stand upright.
Scoop out the insides.
In a bowl mix together the filling ingredients and use a teaspoon to tap the mixture in (do not press) leaving a gap at the top.
Place them in a small cooking pan.
Mix the hot water, tomato and olive oil and add to the side of the pan.
Cover and on a medium heat cook for 20 minutes.
Arrange on a serving plate then pour sauce from the pan on top.
Mix the yogurt sauce ingredients together and also pour on top.
