Fava Beans with Beef or Lamb
150-200gr medium diced Beef or Lamb
500gr wash trimmed and de-stringed Fava Beans cut into 2cm long pieces
1 chopped medium Onion
1 tablespoon of Red Pepper Paste
240ml plus 360ml of Hot Water
1 tablespoon of Butter
4-5 tablespoons of Extra Virgin Olive Oil
Pinch of Salt
For the sauce:
120ml Yogurt mixed with 1 clove of Garlic crushed with salt and 2 tablespoons of chopped Dill
How to prepare
Brown the meat until the juice evaporates and then add the onion, butter and olive oil.
Lightly fry for a few minutes then add 240ml of hot water and simmer until the water has evaporated and the meat has softened.
Add the red pepper paste and fava beans.
Lightly fry a low heat stirring occasionally until the beans turn a yellow colour.
Add 360ml of hot water and salt place the lid half on the pan and simmer for 25-30 minutes (it may be necessary to add more hot water).
Place in a serving dish and top with the yogurt sauce.
