Lamb Shank Kebab with Vegetables
6 Lamb Shanks (approx. 1 kg)
4 tablespoons of Butter or Oil
1 large Potato
3 Green Peppers
1 large Tomato
1 tablespoon of Tomato Paste
125ml of Water
2 cloves of Garlic
How to prepare
Pre heat the oven to 200˚C.
Heat half the butter or oil in a pan and brown the lamb shanks.
Add the onions and cook until caramelised.
Chop all the vegetables and place in an oven bag then add the lamb and onions.
Mix the tomato paste in 125ml of water, add salt and pepper and pour into the bag.
Tie the bag and pierce the top using a fork.
Cook until the meat is almost falling from the bone.
