Leek with Lamb
150gr medium diced Lamb
3 Leeks well washed and cut into chunks
1 peeled and sliced small carrot
1 tablespoon of Flour
1 tablespoon of Butter
1 tablespoon of Extra Virgin Olive Oil
240ml plus 300ml Hot Water
Pinch of Salt
Pinch of Pepper
For the sauce: 1 Egg Yolk and 4 tablespoons Lemon Juice
How to prepare
Brown the lamb, add 240ml of hot water and simmer until almost all the water has evaporated and the lamb is tender.
Add the leek, carrot, butter, olive oil, 300ml of hot water, salt and pepper then sprinkle the flour all over and stir.
Cover and cook on a medium heat for 20 minutes.
In a small bowl whisk together the egg yolk and lemon juice.
Take several spoons of the cooking liquid and blend well into the egg mixture.
Slowly pour the mixture into the pan constantly stirring.
Cover and simmer for 3-4 minutes and then serve whist hot.
