For the meatballs:
150gr medium Minced Mutton or Lamb
2 tablespoons of chopped Pistachio Nuts
¼ teaspoon of Cumin
¼ teaspoon Paprika
Pinch of Salt
Pinch of Pepper
3-4 Long Green Peppers
2 large and halved Tomatoes
Turkish Pide or Pitta Bread
1 thinly sliced Red or White Onion
2 tablespoons roughly chopped Parsley
½ teaspoon of Salt
Pinch of Sumac or Lemon Pepper
Pinch of Paprika
How to prepare
Mix and knead the meatball ingredients until well blended.
Form fist-sized balls, place on a skewer and with wet hands gently squeeze shaping into a long thin rectangle.
Preheat the barbecue or oven grill.
Place the skewers, tomatoes and peppers on the rack.
During the cooking keep turning the skewers so that the meat cooks evenly.
Meanwhile with your hands rub the salt into the onion then rinse and drain.
Toss the parsley and onion together.
Place the bread on the plate with a tomato and pepper, lay the meat on top of the bread, spoon on the onion salad and sprinkle with the sumac or lemon pepper.
Serve with lemon wedges.
