Purslane with Minced Beef
250gr washed and drained Purslane (alternatively use Baby Spinach)
2 tablespoons of lean Minced Beef
1 peeled, chopped fresh large Tomato
2 tablespoons tinned chopped Tomatoes
1 finely chopped small Onion
2 tablespoons of rinsed and drained Rice
2 tablespoons Extra Virgin Olive Oil
1 tablespoon of Butter
1 tablespoon lemon juicePinch of Salt
Pinch of Pepper
For the sauce: 120ml Yogurt mixed with 1 or 2 cloves of Garlic cloves crushed with salt
How to prepare
Lightly fry the onion and butter for 2-3 minutes.
Add the beef, salt and pepper and cook whilst stirring until the juice has evaporated.
Add the rest of the ingredients place the lid on the pan and cook until the rice is done, approx. 10-15 minutes.
Take it off the heat and let it stand for 5 minutes.
Add to a serving dish and spoon on the yogurt.
