Spinach with Lamb
500gr rinsed and drained fresh Baby Spinach
150gr of medium diced Lamb
240ml plus 60ml of Warm Water
1 chopped medium Onion
4 tablespoons of Extra Virgin Olive Oil
1 tablespoon of Butter
1-2 chopped cloves of Garlic
Pinch of milled Black Pepper
Pinch of Salt
Pinch of Pepper
For the sauce: 1 tablespoon of flour and 2 tablespoons of lemon juice
How to prepare
Brown the meat until the juice evaporates then add 240ml of hot water.
Simmer until the meat is tender.
Meanwhile lightly fry the onion with the butter and olive oil for 5 minutes.
Add the garlic and when it releases its aroma add the cooked lamb, 60ml of hot water, milled pepper, salt and pepper and stir.
Place the lid on the pan and cook on a medium heat for 5-6 minutes.
Put the flour and lemon juice in a bowl add 4-5 spoons of the spinach liquid juice and whisk in well.
Slowly pour the mixture over the spinach, stir then cover and simmer for 5 minutes.
