Spinach with Minced Beef
500gr washed, drained and roughly chopped fresh Baby Spinach
150gr Minced Beef
1 finely chopped medium Onion
2 tablespoons of Extra Virgin Olive Oil
1 tablespoon of Butter
2 tablespoons of rinsed and drained Rice
1 peeled and diced small Tomato
1 teaspoon of Red Pepper Paste
3 tablespoons of tinned chopped Tomato
Pinch of Salt
Pinch of Pepper
For the sauce: 120ml Yogurt at room temperature and 1-2 Garlic cloves crushed with salt
How to prepare
Lightly fry the onion with olive oil and butter for 2-3 minutes.
Add the beef, salt and pepper and stir.
Cook until the beef has lightly browned, then stir in the rice, tomato, red pepper paste and tinned tomato.
Place the spinach on top of the beef, cover and cook on a medium heat until the rice is tender and without adding water.
Mix the sauce ingredients and a spoon on top on to the serving bowls.
