Stuffed Peppers with Minced Beef
4 small mixed colour Bell Peppers
3 tablespoons Extra Virgin Olive Oil
1 tablespoon of Butter
60ml tinned chopped Tomato
80ml of Water
For the stuffing:
250gr medium Minced Beef
1 medium peeled and diced Tomato
50gr rinsed Rice
50gr rinsed small grain Bulgur
4 chopped Onions
2 tablespoons of chopped Parsley
1 tablespoon of chopped Dill
2-3 tablespoons of Extra Virgin Olive Oil
2-3 tablespoons of Water
½ teaspoon of Paprika
Pinch of Salt
Pinch of Pepper
How to prepare
Remove the tops of the peppers and set aside, remove and discard the seeds.
In a bowl and using a tablespoon mix together all the filling ingredients.
Use a teaspoon to stuff the peppers, tap the filling in (don’t press down) and leave a space at the top.
Cover the peppers with the tops removed earlier.
Place the peppers in a pan and top with the water, tomato, butter and olive oil.
Cook on medium low for 30 minutes leaving the pan lid half on.
