Pilaff Rice with Mussels
500gr of Rice
40-50 shelled cleaned Mussels
175gr finely sliced Onion
60ml of Olive Oil
1 litre of Water
Salt & Black Pepper
How to prepare
Clean the rice and place in a pan with 2 tablespoons of salt.
Cover with hot water and leave to stand until its cool.
Wash the rice thoroughly and drain.
Heatr the olive oil in a pan add the onions and sauté until brown.
Add the tomatoes and stir well.
Add the mussels, water, salt and pepper and bring up to a boil.
Now add the rice and let it cook on high for 5 minutes.
Reduce the heat to very low heat and simmer for 20 minutes until the rice becomes fluffy.
This dish can be served hot or cold.
The Turkish name for this recipe is Midyeli Pilav.
