Artichokes in Olive Oil
500gr peeled and cleaned Artichokes
2 tablespoons rinsed Rice
1 chopped Onion
1 small peeled and diced Carrot
2 tablespoons chopped Dill
2 x 32ml of Extra Virgin Olive Oil
½ juice of Lemon
½ juice of Orange
360ml of hot Water
1 teaspoon of Sugar
Pinch of Salt
How to prepare
Slice the artichoke into large chunks.
Heat 32ml of oil in a pan and lightly fry the onion for several minutes.
Add the hot water and stir in the remaining ingredients except 1 tablespoon of dill.
Cover and cook on a medium heat for 20 minutes.
It may be necessary to add a little more water.
Allow the mixture to cool down in the pan
Place on a serving dish, drizzle with the remaining oil and sprinkle on the remaining dill.
The dish is best eaten chilled or at room temperature.
