Green Beans in Olive Oil
500gr of Green Beans
1 small chopped Onion
1 chopped clove of Garlic
2 peeled and diced Tomatoes
1 tablespoon of chopped tinned Tomato
50ml of Extra Virgin Olive Oil
1 tablespoon of Sugar
360ml of Water
Pinch of Salt
How to prepare
Wash the beans, trim both ends and shave the sides with a knife.
Heat the oil, add the onion and cook for 3-4 minutes
Add the beans, tomatoes and tinned tomatoes, garlic, sugar and salt and 240ml of water.
Half cover with the lid and cook for 35-40 minutes
Add 120mlo of water half way throught cooking and if necessary add more again later.
Allow the mixture to cool before placing on a serving dish.
Drizzle on some more oil and refrigerate.
The dish is best eaten chilled or at room temperature.
