Leeks with Carrots and Olive Oil
700 gr leeks
1 large or two medium size carrots
3 tablespoons of olive oil
1 teaspoon of sugar
1 teaspoon of salt
How to prepare
Cut the root section of the leeks, take out the exterior layer, wash well and cut into small pieces.
Cut the carrots. Put the carrots into a pan, add the olive oil and 4 tablespoons of water, and cook for 3-4 minutes (as it takes longer for carrots to cook, we need to put these couple of minutes earlier).
Add the leeks, salt, sugar and the juice of a lemon and cook for appx 20 minutes until both carrots and leeks are soft.
