Pursley with Olive Oil
2 packs or bunch of pursley (also called lambs lettuce)
1 teaspoon of salt
1 espresso cup of olive oil
How to prepare
First, wash the pursley well, cut into large pieces and put this aside.
Cut the onions finely, put it in a pan and cook these for 4 minutes with the olive oil until they become soft.
Cut the tomatoes finely (or you can grate these). Add this to the pan and cook for a minute.
Add the pursley and salt, stir well.
Place the lid on and cook for 10-15 minutes.
If you like you can also add 5 serving spoons of rice and 1 espresso cup of water when adding the pursley.
