Spinach with Olive Oil
2 bunches or packs of Spinach
1 large finely chopped Onion
1 tablespoon of Tomato Paste
3 tablespoons of Olive Oil
How to prepare
This recipe makes 3-4 servings.
Wash the spinach well and cut into approx. 3cm thick pieces.
Heat the oil in a pan, add the onion and cook until they are soft and caramelised.
Add the tomato paste and cook for a further minute then add 4 tablespoons of water.
Add the spinach and a pinch of salt, mix well and cook for approx. 15 minutes.
NB: You will need to use a large pan as the spinach takes up a lot of space to begin with.
This dish goes well with yogurt and served with fresh bread.
