Sweet Peas in Olive Oil
350gr frozen Sweet Peas
1 small diced Potato
1 small diced Carrot
2 sliced Spring Onions
½ diced Cubanalle or Long Green Pepper
2 tablespoons of chopped tinned Tomato
1 chopped clove of Garlic
2 x 25ml Extra Virgin Olive Oil
360ml of warm Water
½ teaspoon of Sugar
Pinch of Salt
How to prepare
Heat 25ml of oil in a pan add the garlic, carrot, spring onion and pepper.
When the garlic releases its aroma add the peas, tinned tomato, potato, sugar, salt and water.
Cover half the pan with the lid and cook until the vegetables are tender.
Allow the mixture to cool.
Place on a serving plate, drizzle on the remaining oil and sprinkle with the dill and serve with lemon wedges.
The dish is best eaten chilled or at room temperature.
