Ingredients

2 Chicken Breasts plus 1 Chicken Leg, all skinned boned and diced
1 small thinly sliced Onion
1 small peeled and diced Carrot
1 medium peeled and diced Potato
150gr frozen Sweet Peas
60gr chopped Walnuts
2 tablespoons of Butter
Pinch of Salt
Pinch of Pepper
For the sauce:
2 tablespoons of Flour
120ml of warm Milk
1 Egg
1 tablespoon Extra Virgin Olive Oil
1 tablespoon of Lemon Juice
Pinch of Salt
Pinch of Pepper
For the garnish:
110gr of grated Mozzarella, Kaşar, or Asiago Cheese

How to prepare

This recipe makes 4 servings
Preheat the oven to 200˚C.
Lightly fry the onion in butter for 1 minute.
Add the chicken, salt and pepper and cook until the chicken turns white.
Add the carrot and cook for 2-3 minutes, add the potato and cook for a further 2-3 minutes.
Now add the peas and pour in hot water to just cover the vegetables.
Cover the pan and cook until the water has evaporated then turn the heat off.
In the meantime heat oil in a pan add the flour and cook for a few minutes.
Slowly add the warm milk and blend well stirring constantly.
Turn off the heat and stir in the egg, lemon juice, salt and pepper.
Mix the chicken and vegetables with the sauce and spoon into the ovenproof dish.
Sprinkle over the walnuts then the grated cheese and bake until the top is a light golden colour.
