Okra with Chicken
1 poached Chicken Breast diced into chunks
375gr cooked or tinned Okra
2 tablespoons of tinned Chickpeas
8-10 halved Cherry Tomatoes
2 x 25ml Extra Virgin Olive Oil
120ml of hot Water
1 teaspoon of Salt
For the sauce:
Juice of 1 Lemon
1 crushed clove of Garlic
1 teaspoon of Dry Mint
How to prepare
Place 25ml of oil in a pan, add the rest of the main ingredients, cover and simmer for 20 minutes.
Add the remaining oil.
Mix the sauce ingredients together and pour over the chicken and carefully mix to avoid breaking up the okra.
This dish should be served hot or warm.
