Ingredients

2 boned, skinned and diced Chicken Breasts
1 large peeled and diced Tomato
1 chopped Cubanelle or Long Green Pepper
2-3 chopped Spring Onions
1-2 sliced cloves of Garlic
240ml of Chicken Stock
2 tablespoons of Butter
½ teaspoon of Paprika
Pinch of Salt
Pinch of Pepper
For the aubergine:
1kg of Aubergines
2 tablespoons of Flour
240ml of Milk
720ml of water with ½ juice of lemon and 1 tablespoon salt added
28gr grated Mozzarella Cheese
3 tablespoons of Butter
Pinch of Salt
Pinch of Pepper

How to prepare

This recipe makes 2 servings.
Lightly fry the chicken in butter until a light brown colour.
Add the remaining chicken ingredients, bring up to a boil, cover and reduce the heat.
Simmer for 15-20 minutes and if the pan becomes dry add a little more water.
Pre-heat the grill.
Pierce holes in the aubergines with a fork to help them soften and grill better.
Place them on an oven tray and grill for 35 minutes until they soften turning them occasionally.
Peel with a knife, cut the tops off and remove any large and hard pulp from inside.
Soak them in the water mix for 3-4 minutes to prevent them from discolouring
Remove, drain and chop into small diced pieces.
Melt the butter and blend in the flour, salt and pepper.
Slowly add the milk constantly stirring with a wooden spoon or small egg whisk until well blended.
Stir in the aubergines, mix in the mozzarella and turn the heat off.
Place the aubergines on a serving plate leave the centre hollow and add the chicken to the centre.
This dish is best served warm.
