300gr Broccoli Florets
1 chopped small Onion
½ chopped Red Bell Pepper
840ml Chicken or Vegetable Stock
2-3 tablespoons Extra Virgin Olive Oil
1 tablespoon of Flour
¼ teaspoon of Nutmeg
Pinch of Salt
Pinch of Pepper
Garnish with Feta Cheese, Dry Mint and Paprika
How to prepare
Gently fry the onion and red pepper in the oil for 2-3 minutes.
Sprinkle the flour in the pan, stir then add all other ingredients and bring to a boil.
Reduce the heat to a simmer, cover the pan and cook for a further 20-25 minutes.
Once cooked, blend the mixture until smooth, pour into bowls and garnish with a sprinkle crumbled feta cheese, dry mint and paprika (optional).
The Turkish name of this soup is Brokoli Corbasi.
