1 medium size Celeriac grated
1 finely chopped Onion
Juice of ½ Lemon
3 tablespoons of Olive Oil
28gr of Flour
1 Egg Yolk
1.25lt of Water
How to prepare
Heat oil in a pan, add the onion and cook until soft..
Add the celeriac and continue to cook until soft.
Add the water and cook for a further 15 minutes.
Meanwhite, in a bowl, beat the egg yolk, lemon juice and flour.
Take a ladle of the soup mix and add it to the bowl very slowly constantly stirring.
Allow it to cool down for 5 minutes, then pour all the the mixture in the bowl back into the pan.
Add the salt and cook for a further 5 minutes.
