Chicken & Courgette Soup
1 Chicken Breast fillet diced small
1 small Carrot peeled and diced small
1 small Courgette peeled and diced small
2 tablespoons of Orzo
1 tablespoon of Butter
480ml hot Chicken Stock
60ml of hot water
1 teaspoon of Lemon Juice
Pinch of Salt
Pinch of Pepper
For the Yogurt Sauce: 60ml plain Yogurt and 1 teaspoon of Flour
How to prepare
Melt the butter in a pan add the chicken and cook constantly stirring for 2-3 minutes.
Add the hot water and cook until nearly all the water has evaporated.
Add the courgette, carrot, chicken stock, orzo, lemon juice, salt and pepper and stir.
Cook on a medium low heat until the orzo softens.
Meanwhile in a bowl mix the yogurt and flour.
When the orzo is soft take a few spoons of the cooking liquid and mix into the yogurt and flour.
Next slowly pour the yoghurt mix into the pan while stirring very slowly and cook for 10 minutes on very low heat.
Serve the soup hot..
